Creamy Spinach Mushroom Quinoa Bake

1 cup quinoa, rinsed and drained

2 cups vegetable broth

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

8 ounces mushrooms, sliced (white or cremini)

4 cups fresh spinach, packed

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup cream cheese, softened

1/2 cup plain Greek yogurt

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/4 cup breadcrumbs (optional for topping)

Fresh parsley for garnish (optional)

Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Set aside.

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and sliced mushrooms, cooking for another 5-7 minutes until the mushrooms are golden brown.

      Add Spinach and Seasonings: Add the fresh spinach to the skillet and stir until wilted, about 2-3 minutes. Season with thyme, paprika, salt, and pepper. Remove from heat.

        Prepare Cream Mixture: In a large bowl, combine the softened cream cheese, Greek yogurt, and Parmesan cheese. Mix until smooth and creamy. Add the cooked quinoa and the sautéed vegetable mixture to the bowl and stir to combine all ingredients evenly.

          Transfer and Top: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish. Transfer the quinoa and vegetable mixture to the prepared dish. Spread it evenly and press down gently. Sprinkle the shredded mozzarella cheese on top. If using, sprinkle breadcrumbs for an extra crunchy topping.

            Bake: Bake in the preheated oven for 25-30 minutes, or until the top is bubbly and golden brown.
