Creamy Spinach & Artichoke Pasta

8 oz (225 g) of your favorite pasta (fettuccine, penne, or farfalle)

1 tbsp olive oil

2 cloves garlic, minced

1 small onion, finely chopped

5 oz (140 g) fresh spinach, roughly chopped

1 cup (240 ml) canned artichoke hearts, drained and roughly chopped

1 cup (240 ml) heavy cream

1/2 cup (120 ml) vegetable or chicken broth

1 cup (100 g) grated Parmesan cheese

1/2 cup (50 g) cream cheese, softened

Salt and pepper to taste

1/4 tsp red pepper flakes (optional, for a kick)

Fresh basil or parsley, for garnish

Juice of half a lemon

Instructions
 

Cook the Pasta: Bring a large pot of salted water to boil. Add your pasta and cook according to the package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the pasta and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add minced garlic and chopped onion. Sauté until the onion is translucent, about 3-4 minutes.

      Add Spinach and Artichokes: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Then, add the chopped artichoke hearts and mix well.

        Create the Sauce: Reduce the heat to low and pour in the heavy cream and vegetable or chicken broth. Stir until combined, then add the cream cheese. Mix until the cream cheese is fully incorporated and the sauce is creamy.

          Incorporate Cheese: Gradually add the grated Parmesan cheese to the sauce, stirring continuously until melted and smooth. If the sauce is too thick, gradually add some reserved pasta water until you achieve your desired consistency.

            Season: Season the sauce with salt, pepper, and red pepper flakes (if using). Add the lemon juice for a fresh zest and mix well.

              Combine: Add the cooked pasta to the creamy spinach and artichoke sauce. Toss gently to coat the pasta evenly, allowing it to heat through for about 1-2 minutes.

                Serve: Plate the pasta and garnish with fresh basil or parsley. Serve immediately with extra Parmesan cheese on the side.
