Ingredients

1 package (9 oz) cheese tortellini

1 cup canned pumpkin puree (not pumpkin pie filling)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried sage (or 1 tablespoon fresh sage, chopped)

1/2 teaspoon nutmeg

1/4 teaspoon black pepper

Salt, to taste

2 tablespoons butter

Fresh parsley, chopped (for garnish)

Instructions

Cook the Tortellini: Begin by bringing a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions until al dente. Drain and set aside.

Make the Creamy Pumpkin Sauce: In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.

Add the Pumpkin: Stir in the pumpkin puree, heavy cream, sage, nutmeg, black pepper, and salt. Mix well and allow the sauce to simmer for about 5-7 minutes, stirring occasionally, until the mixture is heated through and slightly thickened.

Incorporate the Cheese: Gradually whisk in the grated Parmesan cheese until it melts smoothly into the sauce. Taste and adjust seasoning if necessary.

Combine with Tortellini: Add the drained tortellini to the skillet, tossing it gently to coat in the creamy pumpkin sauce. Cook for an additional 2-3 minutes, allowing the tortellini to absorb the flavors.

Serve: Transfer the creamy pumpkin Alfredo tortellini to serving plates. Garnish with freshly chopped parsley and a sprinkle of extra Parmesan cheese, if desired.
