Ingredients

1 cup orzo pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz cremini mushrooms, sliced

4 cups fresh spinach, roughly chopped

1 cup vegetable broth

1 cup heavy cream or coconut cream (for a vegan option)

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper, to taste

½ cup grated Parmesan cheese (or nutritional yeast for vegan)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Orzo: In a large pot of salted boiling water, add the orzo and cook according to package instructions until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.

Add Mushrooms: Stir in the sliced cremini mushrooms and cook for 5-7 minutes until they are browned and tender. Season with salt and pepper to taste.

Incorporate Spinach: Gradually add the chopped spinach to the skillet, stirring until it wilts, which should take about 2 minutes.

Create the Sauce: Pour in the vegetable broth and heavy cream (or coconut cream). Stir in the dried thyme and basil. Bring the mixture to a gentle simmer, allowing it to thicken for about 3-4 minutes.

Combine Orzo: Add the cooked orzo to the skillet, mixing well until every piece of pasta is coated in the creamy sauce. If the sauce seems too thick, add a splash of water or more vegetable broth to reach your desired consistency.

Add Cheese: Stir in the grated Parmesan cheese (or nutritional yeast) until melted and well combined. Taste the dish and adjust seasoning with more salt, pepper, or herbs if desired.

Serve: Divide the creamy mushroom and spinach orzo into bowls or on plates. Garnish with freshly chopped parsley and, if desired, more cheese on top.
