8 oz (225g) fettuccine pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts, sliced into thin strips

Salt and black pepper, to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup baby spinach (optional)

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Season the sliced chicken breasts with salt and black pepper. Add the chicken to the skillet and sauté for about 5-7 minutes until golden brown and cooked through. Remove from the skillet and set aside.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it. Pour in the chicken broth and simmer for 2-3 minutes.

        Add Cream and Cheese: Reduce the heat to low, then add the heavy cream and Italian seasoning. Stir well to combine. Gradually add the grated Parmesan cheese, stirring constantly until the sauce is creamy and well-blended.

          Combine: Return the sautéed chicken to the skillet and add the cooked fettuccine. If using, add the baby spinach. Toss everything together gently until the pasta is coated in the creamy sauce, and the spinach has wilted.
