1 lb boneless, skinless chicken breasts, diced

1 cup wild rice, rinsed

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 cup mushrooms, sliced

4 cups low-sodium chicken broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

½ teaspoon black pepper

Salt to taste

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onions are translucent.

    Add Garlic and Mushrooms: Stir in the minced garlic and sliced mushrooms to the pot. Cook for an additional 2-3 minutes until fragrant and the mushrooms have started to release their juices.

      Brown the Chicken: Push the vegetables to one side of the pot and add the diced chicken. Cook until the chicken is no longer pink on the outside, about 4-5 minutes.

        Incorporate Rice and Broth: Add the rinsed wild rice, chicken broth, dried thyme, dried rosemary, and black pepper. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 45-50 minutes, or until the wild rice is tender.
