1 lb (450g) boneless, skinless chicken breasts, diced

1 cup uncooked white rice

2 cups chicken broth

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup corn (frozen or canned)

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup chopped green onions

1/4 cup fresh cilantro, chopped (optional)

Salt and pepper to taste

Cooking oil for sautéing

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet over medium heat, drizzle a bit of cooking oil. Add the diced chicken and season with salt and pepper. Sauté until the chicken is browned and cooked through, about 5-7 minutes. Remove from heat.

      Prepare the Rice Mixture: In a large mixing bowl, combine the uncooked white rice, chicken broth, black beans, diced tomatoes (with their juice), taco seasoning, and corn. Stir until well mixed.

        Combine Ingredients: In a separate bowl, mix the sour cream, half of the cheddar cheese, and half of the Monterey Jack cheese. Once combined, add the cooked chicken to this mixture and stir until evenly distributed.

          Layer the Bake: In a greased 9x13-inch baking dish, pour the rice mixture evenly across the bottom. Spoon the creamy chicken mixture on top of the rice, spreading it out gently. Sprinkle the remaining cheddar and Monterey Jack cheese over the top.

            Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes or until the cheese is bubbly and the rice is tender.
