1 lb (450g) boneless, skinless chicken breasts (diced)

1 cup white rice (uncooked)

1 medium onion (diced)

2 carrots (sliced)

2 celery stalks (sliced)

3 cloves garlic (minced)

6 cups chicken broth

1 cup heavy cream

1 tsp dried thyme

1 tsp dried parsley

1/2 tsp salt (adjust to taste)

1/4 tsp black pepper (adjust to taste)

3 tbsp olive oil

Optional garnish: fresh parsley, croutons, or a sprinkle of paprika

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and sliced celery. Sauté for about 5-7 minutes, until the vegetables become tender.

    Cook the Chicken: Add the diced chicken to the pot and cook for about 5-6 minutes until the chicken is no longer pink, stirring occasionally.
