1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (225g) cremini mushrooms, sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) baby spinach

1 tsp dried thyme

1 tsp dried oregano

1 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 cup (100g) grated Parmesan cheese

2 cups cooked pasta (optional, for serving)

Prepare the Chicken: Season the pieces of chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, add the chopped onion and sauté for about 3 minutes until it becomes translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.
