Ingredients

1 lb boneless, skinless chicken breasts, diced

2 cups broccoli florets

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

2 cloves garlic, minced

1 medium onion, diced

1 tsp Italian seasoning

1 tsp paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions

Prepare the Chicken: Season the diced chicken breasts with salt, pepper, and paprika.

Sauté Onions and Garlic: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.

Cook the Chicken: Increase the heat to medium-high and add the seasoned chicken to the skillet. Cook for about 5-7 minutes, turning occasionally until the chicken is browned and cooked through.

Add Broccoli: Stir in the broccoli florets and cook for 3-4 minutes until they start to become tender.

Create the Sauce: Pour in the chicken broth and heavy cream. Sprinkle in the Italian seasoning, stirring to combine. Bring the mixture to a gentle simmer.

Add Cheese: Once simmering, gradually add the shredded cheddar cheese, stirring until melted and creamy. If the sauce is too thick, add more chicken broth to reach your desired consistency.

Simmer Together: Allow the mixture to simmer for another 3-5 minutes, stirring occasionally. Taste and adjust seasoning with more salt and pepper if needed.

Serve: Remove from heat and garnish with fresh parsley if desired. Serve hot over rice, pasta, or enjoy just as it is!
