Creamy Chicken and Broccoli Rice Skillet

1 lb (450g) boneless, skinless chicken breasts, diced

1 cup long-grain white rice

2 cups low-sodium chicken broth

2 cups fresh broccoli florets

1 cup heavy cream

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Instructions
 

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

    Cook Onions and Garlic: In the same skillet, add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for another 1-2 minutes until fragrant.

      Add Rice and Broth: Stir in the rice and Italian seasoning, cooking for about a minute. Pour in the chicken broth, bring to a simmer, and cover the skillet. Cook for 15-18 minutes, or until the rice is tender and has absorbed most of the liquid.

        Add Broccoli: Once the rice is nearly cooked, add the broccoli florets to the skillet. Cover again and cook for an additional 5 minutes, until the broccoli is bright green and tender.

          Creamy Sauce: Lower the heat and stir in the heavy cream, bringing the mixture to a gentle simmer. Add the cooked chicken back into the skillet and sprinkle with shredded cheddar cheese. Stir until everything is well combined and the cheese melts into the creamy sauce.

            Season and Serve: Taste and adjust the seasoning with more salt and pepper if necessary. Remove from heat, garnish with fresh parsley if desired, and serve hot!
