Ingredients

2 boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup chicken broth

8 ounces fettuccine pasta (or pasta of your choice)

1 cup frozen peas (optional)

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

Prepare Chicken: While the pasta is cooking, season the chicken pieces with salt and pepper.

Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until golden brown and cooked through. Remove from the skillet and set aside.

Add Garlic: In the same skillet, reduce heat to medium, and add minced garlic. Sauté for about 1 minute until fragrant, making sure it doesn’t burn.

Create the Sauce: Pour in the chicken broth and deglaze the skillet, scraping any bits off the bottom. After a minute, add the heavy cream and bring to a slight simmer.

Mix in Cheese: Stir in the grated Parmesan cheese and Italian seasoning. Continue stirring until the cheese is melted and the sauce is creamy.

Combine Chicken and Pasta: Add the cooked chicken and fettuccine to the skillet, tossing everything together to coat in the creamy sauce. If the sauce is too thick, stir in reserved pasta water a little at a time until desired consistency is reached.

Add Peas (Optional): If using, stir in the frozen peas and cook for another 2-3 minutes until heated through.

Garnish & Serve: Remove from heat. Garnish with fresh chopped parsley before serving.
