Creamy Cajun Chicken & Rice Skillet

Ingredients
  

1 lb chicken breast, diced

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), chopped

1 cup long-grain rice

2 cups chicken broth

1 cup heavy cream

1 cup cherry tomatoes, halved

1 cup frozen peas

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Chicken: In a bowl, toss the diced chicken breast with the Cajun seasoning until evenly coated. Set aside to marinate for about 15 minutes.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

      Cook the Chicken: Push the onions and garlic to the side of the skillet and add the seasoned chicken. Cook until the chicken is browned and cooked through, about 5-7 minutes. Stir occasionally to ensure even cooking.

        Add Vegetables: Stir in the chopped bell pepper and sauté for another 2-3 minutes until slightly softened.

          Incorporate Rice: Add the long-grain rice to the skillet, stirring well to combine with the chicken and veggies. Toast the rice for about 1-2 minutes.

            Pour in Broth and Cream: Slowly add the chicken broth and heavy cream to the skillet. Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for about 15 minutes, or until the rice is cooked and has absorbed most of the liquid.

              Finish with Peas and Tomatoes: Stir in the halved cherry tomatoes and frozen peas. Cook for an additional 5 minutes, stirring occasionally, until the peas are heated through and the tomatoes are slightly softened.

                Taste and Adjust: Season with salt and pepper to taste. If you want an extra kick, feel free to add more Cajun seasoning.
