Ingredients

8 oz. penne or rotini pasta

1 lb. ground turkey

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 cup bell peppers, diced (any color)

1 cup chicken broth

1/2 cup buffalo wing sauce (adjust to taste)

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: sliced green onions for garnish

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the penne or rotini according to package instructions until al dente. Drain and set aside.

Sauté the Turkey: In a large skillet over medium heat, add the olive oil. Once hot, add the ground turkey and cook until browned and no longer pink, breaking it up with a spatula as it cooks.

Add Aromatics: Stir in the diced onion, garlic, and bell peppers to the skillet with the turkey. Sauté for about 5-7 minutes or until the vegetables have softened and the onion is translucent.

Build the Sauce: Pour in the chicken broth and buffalo wing sauce. Stir well to combine. Bring the mixture to a light simmer.

Incorporate Creaminess: Lower the heat and add the softened cream cheese to the skillet, stirring until it melts and is fully incorporated into the sauce.

Combine: Add the cooked pasta into the skillet, tossing to coat the pasta evenly in the creamy buffalo sauce.

Cheesy Finish: Sprinkle the shredded mozzarella and grated Parmesan cheese over the pasta. Stir until the cheeses are melted and creamy. Season with salt and pepper to taste.

Serve: Remove from heat. Garnish with chopped fresh parsley and optional green onions. Serve warm and enjoy!
