2 medium zucchinis (zoodles)

1 lb (450 g) boneless, skinless chicken breasts, diced

1 cup heavy cream

1 cup fresh basil leaves, packed

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 tablespoon olive oil

Salt and pepper to taste

Grated Parmesan cheese, for serving

Pinch of red pepper flakes (optional)

Prepare the Zoodles: Using a spiralizer, create zoodles from the zucchinis. Toss them lightly with a sprinkle of salt and set them aside to drain excess moisture.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the diced chicken with salt and pepper, then add it to the skillet. Sauté for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Make the Creamy Basil Sauce: In the same skillet, lower the heat to medium. Add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and let it simmer gently. Add the fresh basil leaves and use an immersion blender or a regular blender to puree the mixture until smooth.

        Combine Ingredients: Return the cooked chicken to the skillet, stirring to coat it thoroughly with the creamy basil sauce. Add the halved cherry tomatoes and stir until everything is heated through, about 2-3 minutes.

          Add the Zoodles: Gently fold in the zoodles, cooking for another 2-3 minutes. The goal is to warm the zoodles without overcooking them; they should maintain some texture.

            Serve: Divide the creamy chicken and zoodle mixture into bowls. Top with grated Parmesan cheese and sprinkle with red pepper flakes if you like a little heat.
