2 ripe avocados

1 cup fresh basil leaves

1/4 cup pine nuts (plus extra for garnish)

2 cloves garlic, minced

1/2 cup Parmesan cheese, grated (or vegan alternative)

1/4 cup extra virgin olive oil

Juice of 1 lemon

Salt and pepper, to taste

12 oz pasta of choice (spaghetti, linguine, or penne)

Cherry tomatoes, halved (for garnish)

Red pepper flakes (optional, for a spicy kick)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and return it to the pot.

    Prepare the Pesto: While the pasta is cooking, add the avocados, basil, pine nuts, minced garlic, Parmesan cheese, olive oil, lemon juice, salt, and pepper to a food processor or blender. Blend until smooth and creamy. If the mixture is too thick, add a little reserved pasta water until you reach your desired consistency.

      Combine Pasta and Pesto: Pour the creamy avocado pesto over the warm pasta in the pot. Toss everything together, ensuring the pasta is evenly coated with the pesto. If needed, add more pasta water, a little at a time, to achieve the desired creaminess.

        Serve: Divide the pesto pasta into serving bowls. Garnish with halved cherry tomatoes, a sprinkle of extra pine nuts, Parmesan cheese, and a pinch of red pepper flakes if you like some spice.
