2 cups fresh corn kernels (or 1 can of corn, drained)

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon honey (or maple syrup for a vegan option)

Salt and pepper to taste

Optional: 1 jalapeño, seeded and minced for heat

Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn kernels and boil for about 4-5 minutes until tender. Drain and let cool. If using canned corn, simply drain and rinse.

    Combine Ingredients: In a large mixing bowl, combine the cooled corn, diced avocado, halved cherry tomatoes, and finely chopped red onion.

      Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until emulsified.
