Cold Tuna & Dill Pasta Salad

8 oz. rotini pasta

1 can (5 oz.) solid white tuna in water, drained

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon red wine vinegar

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Optional: 1/4 cup black olives, sliced

Optional: 1/4 cup feta cheese, crumbled

Cook the Pasta: In a large pot of salted boiling water, cook the rotini according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Prepare the Vegetables: While the pasta is cooling, chop the cherry tomatoes, cucumber, and red onion. If using olives and feta, prepare those as well.

      Mix the Dressing: In a small bowl, whisk together the mayonnaise, Dijon mustard, red wine vinegar, and chopped dill until smooth. Season with salt and pepper to taste.

        Combine Ingredients: In a large mixing bowl, combine the cooled pasta, drained tuna, halved cherry tomatoes, diced cucumber, and red onion. If you are using olives and feta, add them in at this stage.

          Dress the Salad: Pour the dressing over the pasta mixture. Toss gently to ensure everything is evenly coated and incorporated.

            Chill: Cover the salad with plastic wrap or a lid and refrigerate for at least 30 minutes before serving. This allows the flavors to meld together beautifully.
