1 lb large shrimp, peeled and deveined

1 ripe avocado, diced

2 cups mixed greens (arugula, spinach, and kale)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup cucumber, diced

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

1 tablespoon fresh lime juice

1 teaspoon honey (optional)

Salt and pepper, to taste

Lime wedges, for serving

Instructions
 

Cook the Shrimp: In a large pot, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and are cooked through. Remove from heat, drain, and immediately transfer the shrimp to a bowl of ice water to stop the cooking. Let them cool for about 5 minutes, then drain and pat dry with paper towels.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey (if using), salt, and pepper. Adjust seasoning to taste, and set aside.

      Assemble the Salad: In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, cucumber, and cilantro. Gently toss to distribute the ingredients evenly.
