12 oz tri-color rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup Kalamata olives, pitted and halved

1 cup bell pepper (red or yellow), diced

1/2 cup red onion, finely chopped

1 cup feta cheese, crumbled

1/3 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

1/2 teaspoon garlic powder (optional)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the tri-color rotini pasta and cook according to package directions until al dente. Once cooked, drain the pasta and rinse under cold water to cool it down. Set aside in a large mixing bowl.

    Prep the Veggies: While the pasta is cooling, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and bell pepper, and finely chop the red onion and parsley. Add all these ingredients to the bowl with the cooled pasta.

      Add the Olives and Feta: Toss in the Kalamata olives and crumbled feta cheese into the pasta and vegetable mixture.

        Make the Dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder (if using), and season with salt and pepper to taste.

          Combine and Toss: Pour the dressing over the pasta salad and toss everything together gently until evenly coated.

            Chill and Serve: Cover the bowl with plastic wrap or a lid and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together. Serve cold and enjoy!
