8 oz linguine pasta

1 lb large shrimp (peeled and deveined)

4 tbsp unsalted butter

3 tbsp extra virgin olive oil

4 cloves garlic, minced

1/4 tsp red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Add Shrimp: Increase the heat to medium-high. Add the shrimp to the skillet in a single layer, seasoning with salt and pepper. Cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Deglaze the Pan: In the same skillet, pour in the dry white wine, scraping up any bits from the bottom of the pan. Allow the wine to simmer for about 2-3 minutes until it reduces slightly.

          Add Lemon and Pasta: Stir in the lemon juice and zest, then return the shrimp to the skillet. Add the cooked linguine and toss everything together. Use the reserved pasta water to loosen the sauce to your desired consistency.

            Finish Up: Remove from heat and stir in the remaining 2 tablespoons of butter and 1 tablespoon of olive oil. Adjust seasoning with more salt and pepper if needed. Mix in the fresh parsley.
