1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup frozen peas

2 tablespoons tomato paste

1 cup beef or lamb broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4 cups mashed potatoes (prepared ahead of time)

1/2 cup shredded cheddar cheese (optional, for topping)

2 tablespoons olive oil

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Cook the Meat: In a large skillet over medium heat, add olive oil. Once hot, add the ground lamb (or beef) and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Vegetables: Add the chopped onion and garlic to the skillet. Cook until the onion is translucent and fragrant, about 3-4 minutes. Then, add the diced carrots and continue to cook for another 3 minutes.

        Build Flavor: Stir in the tomato paste, mixing thoroughly. Cook for an additional 2 minutes for the paste to caramelize slightly.

          Add Liquids and Seasoning: Pour in the broth and Worcestershire sauce. Stir in the dried thyme and rosemary. Bring to a simmer, then reduce the heat to low. Let it simmer for about 5 minutes, allowing the flavors to meld. Add the frozen peas, and season with salt and pepper to taste.
