For the crust:

1 cup all-purpose flour

1/4 cup powdered sugar

1/2 cup unsalted butter, cold and cubed

1/4 teaspoon salt

For the filling:

1 cup light corn syrup

1 cup packed brown sugar

1/4 cup unsalted butter, melted

3 large eggs

1 teaspoon vanilla extract

1 1/2 cups pecans, roughly chopped

1/2 teaspoon ground cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later. Set aside.

    Make the Crust: In a mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup of powdered sugar, and 1/4 teaspoon of salt. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared baking pan to form a crust.

      Pre-Bake the Crust: Bake the crust in the preheated oven for 15 minutes, or until lightly golden. Remove it from the oven and allow it to cool slightly while you prepare the filling.

        Prepare the Filling: In a medium bowl, whisk together 1 cup of light corn syrup, 1 cup of packed brown sugar, and 1/4 cup of melted butter until well blended. Add in the eggs, one at a time, whisking after each addition until fully incorporated. Stir in the vanilla extract, chopped pecans, and ground cinnamon (if using).

          Combine and Bake: Pour the pecan filling over the pre-baked crust, spreading it evenly. Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and the top is golden brown.

            Cool and Slice: Once baked, remove from the oven and let cool in the pan for at least 1 hour. Carefully lift the bars out of the pan using the parchment overhang, and transfer to a cutting board. Slice into squares or bars.

              Serve: Enjoy warm or at room temperature. They are perfect on their own or served with a dollop of whipped cream!
