Ingredients

For the pie filling:

6 cups fresh peaches, peeled and sliced (about 8 to 10 medium peaches)

3/4 cup granulated sugar

2 tablespoons lemon juice

1/4 cup all-purpose flour

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon unsalted butter, cut into small pieces

For the crumb topping:

1 cup all-purpose flour

1 cup old-fashioned rolled oats

1/2 cup packed brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

For the pie crust:

1 pre-made pie crust (homemade or store-bought)

Instructions

Prepare the Pie Crust:

    - Roll out the pie crust and fit it into a 9-inch pie pan, crimping the edges as desired. Place the crust in the refrigerator to chill while you prepare the filling and crumb topping.

      Make the Peach Filling:

        - In a large mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, flour, ground cinnamon, and nutmeg. Toss gently to coat the peaches evenly. Let the mixture sit for about 10-15 minutes to allow the juices to release.

          Preheat the Oven:

            - Preheat your oven to 425°F (220°C).

              Prepare the Crumb Topping:

                - In another mixing bowl, combine the flour, rolled oats, brown sugar, ground cinnamon, and salt. Stir to combine.

                  - Drizzle in the melted butter and mix with a fork or your fingers until the topping resembles coarse crumbs. Set aside.

                    Assemble the Pie:

                      - Pour the peach filling into the chilled pie crust, spreading it evenly. Dot the top with small pieces of butter.

                        - Sprinkle the crumb topping generously over the peach filling, ensuring it covers the fruit evenly.

                          Bake the Pie:

                            - Place the pie on a baking sheet to catch any drips. Bake in the preheated oven for 15 minutes.

                              - Lower the oven temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the topping is golden brown and the filling is bubbling. If the topping begins to brown too quickly, cover the edges with aluminum foil.

                                Cool and Serve:

                                  - Once baked, remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours to set before slicing.

                                    - Serve warm or at room temperature, optionally with a scoop of vanilla ice cream on top!
