1 lb ground beef

1 cup elbow macaroni

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 can (6 oz) tomato paste

1 medium onion, diced

2 cloves garlic, minced

1 cup beef broth

2 tablespoons chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

1 cup shredded sharp cheddar cheese

2 tablespoons olive oil

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Sauté the Veggies: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until soft, about 5 minutes. Stir in the minced garlic and sauté for an additional 1 minute until fragrant.
