1 pound rigatoni pasta

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 pound ground beef or Italian sausage

1 can (28 ounces) crushed tomatoes

1 can (15 ounces) tomato sauce

2 teaspoons dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups ricotta cheese

2 cups shredded mozzarella cheese (divided)

½ cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the rigatoni according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables and Meat: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 3 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

        Add Meat: To the skillet, add the ground beef or Italian sausage. Cook until browned, breaking it up as it cooks, about 5-7 minutes. Drain excess fat if necessary.

          Make the Sauce: Stir in the crushed tomatoes, tomato sauce, dried basil, oregano, red pepper flakes (if using), and season with salt and pepper. Bring the sauce to a simmer and let it cook for about 15 minutes, stirring occasionally.

            Combine Pasta and Sauce: In a large mixing bowl, combine the cooked rigatoni with the meat sauce. Mix in the ricotta cheese until well incorporated.

              Layer the Rigatoni: In a greased 9x13-inch baking dish, layer half of the rigatoni mixture. Sprinkle 1 cup of shredded mozzarella cheese over this layer. Top with the remaining rigatoni mixture and finish with the rest of the mozzarella cheese and grated Parmesan.

                  Garnish and Serve: Once baked, let the rigatoni cool for about 5 minutes before serving. Garnish with fresh basil leaves if desired.
