Chilled Couscous Salad

Ingredients
  

1 cup couscous

1 ¼ cups vegetable broth

1 cup firm cucumber, diced

1 cup cherry tomatoes, halved

½ cup red bell pepper, diced

½ cup red onion, finely chopped

½ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

Zest and juice of 1 lemon

3 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

Salt and pepper to taste

Instructions
 

Cook the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for about 5 minutes until the couscous absorbs the broth. Fluff the couscous with a fork and let it cool to room temperature.

    Prepare the Vegetables: While the couscous is cooling, prepare your vegetables. Dice the cucumber, halve the cherry tomatoes, dice the red bell pepper, and finely chop the red onion.

      Make the Dressing: In a small bowl, combine the zest and juice of the lemon, olive oil, red wine vinegar, salt, and pepper. Whisk until well combined.

        Combine All Ingredients: In a large bowl, combine the cooled couscous, diced cucumber, cherry tomatoes, red bell pepper, red onion, Kalamata olives, feta cheese, and parsley. Pour the dressing over the salad and toss gently to combine all ingredients evenly.

          Chill and Serve: Cover the salad with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve chilled, garnished with extra parsley or a sprinkle of feta if desired.
