1 cup cooked black beans (drained and rinsed)

1 cup corn kernels (fresh, frozen, or canned)

1 cup bell peppers (diced, any color)

1 small red onion (finely chopped)

2 cloves garlic (minced)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese (or vegan cheese)

4 large whole wheat tortillas or taco wraps

1 avocado (sliced)

½ cup Greek yogurt or sour cream (or dairy-free alternative)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Veggies: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and bell peppers. Sauté for about 3-4 minutes or until softened.

    Add Garlic and Spices: Stir in the minced garlic, ground cumin, smoked paprika, chili powder, salt, and pepper. Cook for another minute until fragrant.

      Combine Ingredients: Add the black beans and corn to the skillet. Cook for 5-6 minutes until the mixture is heated through, stirring occasionally. Adjust seasoning if necessary. Remove from heat.
