Chicken Skewers with Peach Salsa

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

Salt and pepper, to taste

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

For the Peach Salsa:

2 ripe peaches, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional, for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Marinate Chicken:

    - In a medium bowl, combine olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, pepper, and lemon juice. Add the chicken pieces and toss until well coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

      Prepare Peach Salsa:

        - In a separate bowl, mix the diced peaches, red onion, jalapeño (if using), cilantro, lime juice, and salt. Taste and adjust seasoning if necessary. Let it sit to allow flavors to meld while you prepare the skewers.
