Chewy Pumpkin Oatmeal Cookies

1 cup pumpkin puree (canned or homemade)

½ cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

1 large egg

1 tsp vanilla extract

1 ½ cups rolled oats

1 cup all-purpose flour

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup chocolate chips (optional)

¼ cup chopped walnuts or pecans (optional)

Instructions
 

Preheat your oven: Set your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream the butter and sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This will take about 2-3 minutes with an electric mixer.

      Add egg and pumpkin: Beat in the egg, then mix in the pumpkin puree and vanilla extract until the mixture is well combined.

        Combine dry ingredients: In a separate bowl, whisk together the rolled oats, flour, ground cinnamon, ground nutmeg, baking powder, baking soda, and salt.
