Cheesy Spinach and Mushroom Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup mushrooms, diced

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper, to taste

3 cups marinara sauce

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

      Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Add minced garlic and diced mushrooms, and sauté for about 5–7 minutes, until the mushrooms are golden and tender. Add the chopped spinach, stirring until wilted. Season with salt, pepper, and Italian seasoning. Remove from heat and let cool.

        Prepare the Filling: In a large bowl, combine the ricotta cheese, 1 cup of mozzarella, Parmesan cheese, egg, and the cooled spinach and mushroom mixture. Mix until well combined. Taste and adjust seasoning as needed.

          Stuff the Shells: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13-inch baking dish. Carefully fill each jumbo shell with the cheese and vegetable mixture and place them seam side up in the baking dish.

            Top with Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells, making sure to cover them evenly. Sprinkle the remaining ½ cup of mozzarella cheese on top.

              Bake: Cover the dish tightly with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10–15 minutes or until the cheese is bubbly and slightly golden.

                Garnish and Serve: Once out of the oven, let it rest for about 5 minutes before serving. Garnish with fresh basil, if desired.
