There's something magical about a warm, cheesy casserole that brings families together. Often, the kitchen is the heart of a home, where aromas wafting from the oven create an inviting atmosphere. Growing up, my kitchen was often filled with the tantalizing scent of cheesy enchiladas baking, a dish my mom prepared with love and a hint of spice. Those cozy evenings spent around the dinner table, sharing stories and laughter, are some of my fondest memories. Today, I’m excited to recreate that comfort and joy with a delicious Cheesy Ground Beef Enchilada Casserole. This dish is not only easy to make but also packed with flavor, making it perfect for busy weeknights or a weekend family gathering.

Cheesy Ground Beef Enchilada Casserole

Ingredients
  

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) enchilada sauce

8 corn tortillas, cut into strips

2 cups shredded cheddar cheese (divided)

1 cup diced tomatoes (fresh or canned)

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh cilantro (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Ground Beef: In a large skillet over medium heat, add the ground beef. Break it apart with a spatula and cook until browned, about 5-7 minutes. Drain excess grease.

      Sauté Vegetables: Add the chopped onion and minced garlic to the cooked beef. Sauté for an additional 3-4 minutes until the onion is translucent.

        Mix Ingredients: Stir in the black beans, diced tomatoes, enchilada sauce, ground cumin, chili powder, salt, and pepper. Let simmer for about 5 minutes, allowing the flavors to meld.

          Layer the Casserole: In a 9x13 inch baking dish, start by layering half of the tortilla strips at the bottom. Then, pour half of the beef mixture over the tortillas, followed by 1 cup of shredded cheese. Repeat the layers with the remaining tortillas, beef mixture, and top with the remaining cheese.

            Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

              Serve: Once out of the oven, let it cool for a few minutes. Garnish with sliced green onions and fresh cilantro if using. Slice into squares and serve warm.
