Cheesy Broccoli & Rice Casserole

2 cups broccoli florets (fresh or frozen)

1 cup uncooked long-grain white rice

2 ½ cups vegetable or chicken broth

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk

½ cup cream of mushroom soup (optional)

1 medium onion, chopped

2 cloves garlic, minced

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon black pepper

Salt to taste

½ cup breadcrumbs

2 tablespoons butter, melted

1 teaspoon paprika (for garnish, optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, boil a pot of water and blanch the broccoli florets for about 2-3 minutes until vibrant green. Drain and immediately submerge in ice water to stop cooking. If using frozen, simply thaw them and set aside.

      Cook Rice: In a medium saucepan, combine the uncooked rice and vegetable or chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes, or until rice is tender and liquid is absorbed. Fluff with a fork and set aside.

        Sauté Veggies: In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onions and garlic, broccoli florets, milk, cream of mushroom soup (if using), shredded cheddar cheese, and shredded mozzarella cheese. Season with garlic powder, onion powder, black pepper, and salt. Mix well until everything is evenly coated.

            Prepare Casserole Dish: Lightly grease a 9x13 inch casserole dish. Pour the rice-broccoli mixture into the dish and spread it evenly.

              Prepare Topping: In a small bowl, combine breadcrumbs, melted butter, and paprika (if using) to create a crumbly topping. Sprinkle this mixture evenly over the casserole.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.

                  Cool and Serve: Remove from oven and let it cool for a few minutes before serving. This dish is perfect as a side or can be enjoyed as a hearty main course!
