2 cups cooked rice (white or brown)

3 cups fresh broccoli florets (or frozen, thawed)

1 cup sharp cheddar cheese, shredded

1 cup cream of mushroom soup (or make your own)

1/2 cup milk

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil or melted butter (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Broccoli: If using fresh broccoli, bring a pot of salted water to a boil and blanch the florets for about 3 minutes until vibrant green and tender-crisp. Drain and set aside. If using frozen broccoli, ensure it is completely thawed and drained.

      Prepare the Mixture: In a large mixing bowl, combine the cooked rice, prepared broccoli, cheddar cheese, cream of mushroom soup, milk, chopped onion, minced garlic, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

        Transfer to Baking Dish: Grease a 9x13 inch casserole dish with cooking spray or a touch of olive oil. Pour the broccoli and rice mixture into the dish, spreading it evenly.

          Prepare the Topping (Optional): In a small bowl, mix breadcrumbs with olive oil or melted butter until coated. Sprinkle this mixture evenly over the casserole for a crunchy topping.

            Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the casserole is bubbling and heated through. If you are using the breadcrumb topping, let it bake until golden brown, about 5 minutes more.
