1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 cup salsa (mild, medium, or hot according to your preference)

1 teaspoon chili powder

1 teaspoon cumin

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

8 small corn tortillas

1/2 cup sour cream (optional, for serving)

Fresh cilantro, chopped (for garnish, optional)

1 tablespoon olive oil

Salt and pepper to taste

Preheat and Prepare: Preheat your oven to 375°F (190°C). Gather all your ingredients to streamline the cooking process.

    Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes. Season with salt, pepper, chili powder, and cumin. Stir in the black beans and half of the salsa, cooking for another 2 minutes until heated through.

      Warm the Tortillas: While the beef mixture is cooking, wrap the corn tortillas in a damp paper towel and microwave for about 30 seconds to soften them. This will make them easier to roll.

        Assemble the Enchiladas: In a greased baking dish, spread a small amount of salsa on the bottom. Take a tortilla, fill it with a generous scoop of the beef and bean mixture, sprinkle some shredded cheese in, and roll it up tightly. Place the rolled tortilla seam side down in the baking dish. Repeat with remaining tortillas.

          Top with Sauce and Cheese: Once all enchiladas are in the dish, pour the remaining salsa over the top of them. Sprinkle the remaining shredded cheese evenly over the salsa.

            Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

              Serve: Remove from the oven and let cool for a couple of minutes. Serve hot, topped with dollops of sour cream and cilantro if desired.
