Ingredients

1 cup pureed pumpkin (canned or freshly cooked)

1 cup shredded sharp cheddar cheese

1/2 cup all-purpose flour

1/4 cup grated Parmesan cheese

1 large egg

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional, for a little heat)

Cooking spray or olive oil for greasing

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.

Mix Wet Ingredients: In a large mixing bowl, combine the pureed pumpkin and egg. Whisk until smooth and well-blended.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, sharp cheddar cheese, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using).

Combine Mixtures: Gradually add the dry ingredients to the pumpkin mixture, stirring with a spatula or wooden spoon until just combined. Make sure not to overmix the dough; it should be thick yet slightly sticky.

Shape the Bites: Using a tablespoon or small cookie scoop, scoop the mixture and form bite-sized balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 15-20 minutes or until the bites are golden brown and slightly crispy on the outside.

Cool and Serve: Remove from the oven and let them cool for a few minutes. Serve warm as a delightful appetizer or snack, perhaps with a dipping sauce like spicy aioli or a creamy ranch.

Prep Time: 15 minutes | Total Time: 35 minutes | Servings: About 18-20 bites
