4 large carrots, peeled and chopped into small rounds

1 tablespoon fresh ginger, grated

1 small onion, diced

2 cloves garlic, minced

4 cups vegetable broth

3 tablespoons miso paste (preferably white or yellow)

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon ground turmeric (optional, for color and health benefits)

Salt and pepper, to taste

1 green onion, sliced (for garnish)

A handful of fresh cilantro (for garnish)

Sauté Aromatics: In a large pot, heat the sesame oil and olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the garlic and grated ginger, cooking for another minute until fragrant.
