Ingredients

1 cup frozen carrots (steamed and then frozen)

1 ripe banana

1/2 cup oat milk (or any milk of your choice)

1/4 cup Greek yogurt (or dairy-free alternative)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon maple syrup (optional, for sweetness)

Toppings: 2 tablespoons granola, 1 tablespoon shredded coconut, 1 tablespoon chopped walnuts, a sprinkle of cinnamon, and a few carrot shavings.

Instructions

Prepare the Carrots: Make sure your frozen carrots are steamed beforehand. If not, steam fresh carrots until soft, then let them cool and freeze.

Combine Ingredients: In a blender, add the frozen carrots, banana, oat milk, Greek yogurt, vanilla extract, ground cinnamon, ground nutmeg, and maple syrup.

Blend Smoothly: Blend on high until smooth and creamy, scraping down the sides as necessary. The mixture should be thick but pourable. If it’s too thick, add a splash more oat milk.

Taste and Adjust: Give your smoothie a taste and adjust sweetness or spices if needed.

Assemble the Bowl: Pour the smoothie mixture into a bowl.

Add Toppings: Top with granola, shredded coconut, chopped walnuts, a sprinkle of cinnamon, and carrot shavings for garnish.

Serve and Enjoy: Grab a spoon and dig in! Enjoy the flavors of carrot cake in this nutritious smoothie bowl.
