Caprese Chicken Foil Packets

2 chicken breasts (boneless, skinless)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved

1/4 cup fresh basil leaves, chopped

2 tablespoons balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

1 teaspoon Italian seasoning

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Foil Packets: Cut 2 large pieces of aluminum foil, about 12x12 inches each.

      Season the Chicken: In a bowl, combine olive oil, minced garlic, balsamic vinegar, salt, pepper, and Italian seasoning. Mix well. Add the chicken breasts to the bowl and ensure they are nicely coated with the marinade. Let them sit for about 10 minutes.

        Assemble the Packets: Place one chicken breast on the center of each piece of foil. Top each chicken breast with the halved cherry tomatoes, mozzarella balls, and chopped basil.

          Seal the Packets: Fold the sides of the foil over the chicken and toppings, sealing the packets well to prevent any juices from leaking out.

            Cook the Packets: Place the sealed foil packets on a baking sheet and bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C).

              Serve: Once done, carefully open the foil packets (watch out for steam) and serve the chicken topped with the melted mozzarella and fresh ingredients. Enjoy with a side of crusty bread or a fresh salad!
