1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup long-grain white rice

1 ¾ cups low-sodium chicken broth

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, diced

3 cloves garlic, minced

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon paprika

1 teaspoon dried oregano

½ teaspoon black pepper

½ teaspoon salt

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Foil: Tear off four large pieces of aluminum foil (about 12x18 inches each). Place them on a large baking sheet for easy handling.

      Mix Ingredients: In a large bowl, combine the chicken pieces, rice, chicken broth, diced bell peppers, diced onion, minced garlic, Cajun seasoning, paprika, oregano, black pepper, salt, and olive oil. Mix thoroughly until everything is evenly coated with the seasoning.

          - Spoon an equal amount of the mixture onto the center of each piece of foil.

            - Fold the sides of the foil up over the ingredients and then tightly seal the top, ensuring there are no leaks. You want to create a packet that can trap steam for cooking.
