Cajun Blackened Tilapia Tacos

Ingredients
  

4 tilapia fillets (about 6 ounces each)

2 tablespoons Cajun seasoning (store-bought or homemade)

2 tablespoons olive oil

1 medium avocado, sliced

1 cup shredded cabbage (green or red for color)

1 medium tomato, diced

¼ cup fresh cilantro, chopped

1 lime, cut into wedges

8 small corn tortillas

Salt and pepper to taste

Optional: hot sauce for serving

Instructions
 

Prepare the Tilapia:

    - Pat the tilapia fillets dry with a paper towel. Season both sides generously with Cajun seasoning, salt, and pepper.

      Heat the Pan:

        - In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until it’s shimmering.

          Blacken the Fish:

            - Carefully place the seasoned tilapia fillets in the hot skillet. Cook for about 3-4 minutes on each side, or until the fish is cooked through and has a dark, charred exterior. The fish should flake easily with a fork. Remove from skillet and let it rest for a couple of minutes.

              Warm the Tortillas:

                - While the fish is resting, warm the corn tortillas in another skillet over medium heat for about 30 seconds per side or until pliable. Keep them warm by wrapping in a clean kitchen towel.

                  Assemble the Tacos:

                    - Flake the blackened tilapia into bite-sized pieces. For each taco, place a generous amount of cabbage on a tortilla, followed by the flaked fish. Top with sliced avocado, diced tomato, and chopped cilantro.
