Buffalo Chicken Quesadilla Stackers

2 cups cooked shredded chicken

1/2 cup buffalo wing sauce (adjust to taste)

1 tablespoon olive oil

8 flour tortillas (uncooked or pre-cooked)

2 cups shredded sharp cheddar cheese

2 cups shredded mozzarella cheese

1/2 cup diced green onions (optional, for garnish)

1/4 cup crumbled blue cheese (optional, for garnish)

Sour cream or ranch dressing (for serving)

Instructions
 

Prep the Chicken Filling: In a large bowl, mix the cooked shredded chicken with buffalo wing sauce. Taste and adjust the heat by adding more sauce if desired.

    Heat the Pan: In a large skillet, heat olive oil over medium heat. You can also opt for a non-stick griddle if available.

      Assemble the Quesadilla: Take one tortilla and evenly spread a quarter of the chicken mixture over half of the tortilla. Sprinkle about 1/4 cup of shredded sharp cheddar cheese and 1/4 cup of shredded mozzarella cheese on top of the chicken.

        Fold and Cook: Fold the tortilla in half, pressing down gently to seal. Place the folded quesadilla in the hot skillet. Cook for about 3-4 minutes on one side or until golden brown, then flip carefully and cook for an additional 3-4 minutes until the cheese is melted and the tortilla is crispy.

          Keep Warm and Repeat: Remove the cooked quesadilla from the skillet and place it in a warm oven. Continue assembling and cooking the remaining quesadillas in the same manner.

            Stack and Serve: Once all quesadillas are cooked, stack two or three on a plate, cut into triangles, and sprinkle with diced green onions and crumbled blue cheese if using.
