Ingredients

1 pound baby carrots (or regular carrots, peeled and cut into sticks)

2 tablespoons unsalted butter

1/4 cup brown sugar, packed

1/4 cup pure maple syrup

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon cinnamon (optional, for warmth)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon lemon juice (for brightness)

Chopped fresh parsley or thyme for garnish (optional)

Instructions

Prep the Carrots: If using regular carrots, peel and slice them into thin sticks (about 1/4-inch thick). If using baby carrots, rinse them under cold water and pat dry.

Make the Glaze: In a medium skillet, melt the unsalted butter over medium heat. Once melted, stir in the brown sugar and maple syrup until well combined.

Season: Add the sea salt, black pepper, and cinnamon (if using) to the butter-sugar mixture. Stir until the ingredients are dissolved and the glaze is smooth.

Cook the Carrots: Add the prepared carrots to the skillet. Toss them gently to coat in the glaze. Cook for about 10 to 15 minutes, stirring occasionally, until the carrots are tender and the glaze has thickened slightly.

Add Fresh Herbs and Lemon: Stir in the fresh thyme leaves and lemon juice during the last couple of minutes of cooking, allowing the flavors to meld.

Serve: Once the carrots are tender and glossy, remove them from heat. Transfer to a serving dish and garnish with additional thyme or parsley if desired. Serve warm.
