1 cup rolled oats

1 ½ cups almond flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 scoop vanilla protein powder (about 30g)

½ cup honey or maple syrup

¼ cup Greek yogurt

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 cup fresh or frozen blueberries

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, baking soda, salt, and protein powder. Stir well to ensure all dry ingredients are evenly combined.

      Combine Wet Ingredients: In another bowl, whisk together the honey (or maple syrup), Greek yogurt, eggs, vanilla extract, lemon zest, and lemon juice until smooth and creamy.

        Combine Wet and Dry Mix: Pour the wet mixture into the dry ingredients and gently fold them together until just combined. Be careful not to overmix.
