1 ½ cups all-purpose flour

½ cup granulated sugar

2 tsp baking powder

½ tsp baking soda

½ tsp salt

1 large egg

¾ cup buttermilk (or plain yogurt)

⅓ cup vegetable oil

1 tsp vanilla extract

1 ½ cups fresh blueberries (or frozen, if in season)

For the Crumble Topping:

½ cup all-purpose flour

½ cup rolled oats

¼ cup brown sugar, packed

½ tsp ground cinnamon

¼ cup unsalted butter, melted

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a standard muffin tin with paper liners or grease it lightly.

    Prepare the Muffin Batter: In a large mixing bowl, whisk together 1 ½ cups of flour, ½ cup of granulated sugar, baking powder, baking soda, and salt. In another bowl, whisk the egg, buttermilk, vegetable oil, and vanilla extract until well combined.

      Combine Dry and Wet Ingredients: Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just mixed, being careful not to over-stir. The batter should be slightly lumpy. Gently fold in the blueberries until evenly distributed.

        Make the Crumble Topping: In a separate small bowl, combine ½ cup of flour, rolled oats, brown sugar, ground cinnamon, and melted butter. Mix until the mixture resembles coarse crumbs.

          Fill the Muffin Tin: Evenly distribute the muffin batter into the prepared muffin tin, filling each cup about ⅔ full. Sprinkle a generous amount of the crumble topping over each muffin.
