1 pound boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

1 packet ranch seasoning mix

1 cup corn kernels (fresh, frozen, or canned)

1 cup bell peppers, sliced (mix of red, yellow, and green for color)

1 cup red onions, sliced

2 cups baby spinach or mixed greens

1 tablespoon olive oil

Salt and pepper to taste

4 large pieces of aluminum foil

Optional: shredded cheese (cheddar or mozzarella) for topping

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F or 190°C).

    Prepare the Chicken: In a medium bowl, combine the chicken breasts, BBQ sauce, and ranch seasoning mix. Make sure the chicken is coated evenly. Allow it to marinate for at least 15 minutes for the flavors to meld.

      Prep the Veggies: In another bowl, toss the corn, bell peppers, and red onions with olive oil. Season with salt and pepper to taste.

        Assemble the Foil Packs: Lay out four pieces of aluminum foil, each about 12x18 inches in size. In the center of each piece of foil, place a portion of the marinated chicken, followed by a generous scoop of the veggie mixture. Top with a handful of baby spinach.
