Baked Turkey and Swiss Sandwich Melts

8 slices of whole grain bread

8 ounces of sliced turkey breast (deli or roasted)

8 slices of Swiss cheese

1 cup of baby spinach leaves

¼ cup of Dijon mustard

¼ cup of mayonnaise

1 tablespoon of olive oil

1 teaspoon of garlic powder

½ teaspoon of dried oregano

Salt and pepper, to taste

Optional: Pickles or sliced tomatoes for added flavor

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Spread: In a small bowl, mix together the Dijon mustard and mayonnaise until smooth. Set aside.

      Assemble the Sandwiches: On a flat surface, lay out the slices of whole grain bread. Spread a generous amount of the Dijon-mayo mixture on one side of each slice.

        Layer Ingredients: On four slices of bread, layer the sliced turkey breast, followed by a slice of Swiss cheese, a handful of baby spinach, and an optional layer of pickles or sliced tomatoes. Top with the remaining slices of bread, spreading the mustard/mayo mixture on the inside.
