Baked Teriyaki Chicken Pineapple Skewers

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch pieces

1/2 cup teriyaki sauce

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon grated ginger

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 red onion, cut into wedges

Salt and pepper to taste

Wooden skewers, soaked in water for 30 minutes

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the teriyaki sauce, honey, soy sauce, sesame oil, rice vinegar, garlic, and ginger. Add in the chicken cubes, making sure they are well-coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper for easy cleanup.

      Prepare the Skewers: After marinating, take the soaked wooden skewers and start assembling. Alternate chicken, pineapple chunks, red and green bell pepper pieces, and onion wedges onto the skewers. Aim for 4-5 pieces of chicken per skewer.

        Season the Skewers: Lightly brush the assembled skewers with any remaining marinade. Sprinkle with salt and pepper according to your taste.
