Baked Macaroni and Cheese with Spinach

8 ounces elbow macaroni

2 cups fresh spinach, chopped

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon mustard powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup breadcrumbs (panko preferred)

2 tablespoons olive oil

Optional: pinch of cayenne pepper for heat

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

      Sauté Spinach: In a large skillet over medium heat, add the chopped spinach and sauté for 2-3 minutes until wilted. Remove from heat and set aside.

        Make the Cheese Sauce: In the same skillet, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until it’s slightly golden. Slowly whisk in the milk and bring it to a simmer. Stir continuously until the mixture thickens, about 5 minutes.

          Season the Sauce: Add garlic powder, onion powder, mustard powder, black pepper, and salt. Mix well. Then, remove from heat and stir in the cheddar and mozzarella cheese until melted and smooth. If you’re adding a pinch of cayenne for extra kick, stir it in now.

            Combine Ingredients: In a large mixing bowl, combine the cooked macaroni, sautéed spinach, and cheese sauce. Stir until the pasta and spinach are evenly coated with the cheese sauce.

              Prepare for Baking: Pour the macaroni and cheese mixture into a greased 9x13 inch baking dish.

                Breadcrumb Topping: In a small bowl, mix the breadcrumbs with olive oil and a pinch of salt. Sprinkle the breadcrumb mixture evenly over the top of the macaroni and cheese.

                  Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the edges are bubbly.
