Baked Feta Pasta with Roasted Peppers

400g penne pasta

200g block of feta cheese

3 large red bell peppers, cut into strips

1 medium red onion, sliced

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red chili flakes (adjust to taste)

1/4 cup extra virgin olive oil

Salt and pepper to taste

Fresh basil, for garnish

Zest and juice of 1 lemon

1/2 cup cherry tomatoes, halved (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 200°C (400°F).

    Prepare the Vegetables: In a large baking dish, spread the sliced red bell peppers and red onion. Drizzle them with half of the olive oil (about 2 tablespoons) and season with salt, pepper, oregano, and red chili flakes. Toss to combine.

      Add Feta: Place the block of feta cheese in the center of the vegetable mixture. Drizzle the feta with the remaining olive oil and sprinkle with more oregano, salt, and pepper.

        Roast: Bake the dish in the preheated oven for about 25-30 minutes, or until the peppers are tender and the feta is soft and golden.

          Cook Pasta: While the vegetables are roasting, cook the penne pasta according to package instructions in salted water until al dente. Drain and set aside.

            Combine Ingredients: Once the feta and peppers are done roasting, remove them from the oven. Use a fork to mash the feta cheese and mix it with the roasted peppers and onions, creating a creamy sauce. If using, add the cherry tomatoes, lemon zest, and lemon juice into the mix.

              Mix Pasta and Sauce: Toss the cooked penne pasta in the baking dish with the roasted vegetable and feta sauce until well coated. Adjust seasoning with salt and pepper if needed.

                Serve: Garnish the dish with fresh basil leaves and an extra drizzle of olive oil if desired. Serve hot and enjoy!
